make pesto!
2 ½ C firmly packed garlic mustard leaves, cleaned & dried
1 C pine nuts –or– walnuts
2 (or more) cloves of garlic
1 C extra virgin olive oil
½ t sea salt
¼ C nutritional yeast + 1 T miso –or– ¼ C parmesan
Combine in food processor. Serve over pasta, pizza, in lasagna, or use as a dip or spread for crackers or veggies, or smear it on a wrap.
This is a forgiving recipe – any ingredients can be adjusted to taste.
* Garlic mustard is a non-native plant, introduced from Europe in the 1860’s for food and medicinal purposes. It now out-competes native plants by monopolizing sunlight, moisture, and soil nutrients. There’s plenty of info on the internet if you want to learn more. Me, I’ve spent several days of my life pulling plants during volunteer workdays for various organizations.
I don’t have the patience required to pull and destroy all that we have here, but if I can work this into some of my recipes, maybe I’ll have an impact on the population over time. I made it this first time as a novelty and didn't expect to like it, but it's pretty darn tasty!

I intend to try this ASAP! I've also spent too much time pulling it up (and a little bit of time, I confess, photographing) so I'm happy to find something useful to do with it afterward. Can you freeze the pesto?
I believe so. The recipes I found online suggested freezing it in ice cube trays and using as needed. I think I'd want an extra set of ice cube trays for this!

Thanks for the recipe. I've never eaten it, but I'm tempted now. I've heard several people in the know say that GM was intentionally planted by people that did use it for culinary purposes, rather than simply freeloading over the Atlantic ocean. I'll be pulling GM on April 28th- but I get paid for it. Kudos to all that pull this stuff on their own time.

Tom, hope you try the recipe (or any other version) some time! We need a movement of people rhapsodizing over it, spreading the word, making it desirable... till thieves start stripping it from our natural areas in the dark of night. ;o)
